Plantains as a Bun Replacement? Yes PLEASE!
My inspiration for this came from one of those viral Facebook videos that highlights restaurant in south Florida. One of their most popular burgers uses a fried plantain instead of a bun. I thought it looked pretty simple and wanted to try since Cory is allergic to most things that are bread. Turns out, it’s easy AND really freaking tasty! I’ve since learned from an old friend who lived in Costa Rica for a while that this is actually a very common treat in Costa Rica called patacones.

*1 plantain yields 1 bun
- coccnut oil
- sea salt
Peel and cut plantains in half. If you’ve never done it before, check this video here for instructions!
Over medium high heat, add coconut oil to a skillet. Once warm add plantains and cook 2 minutes on one side.
Flip plantains and cook another 2 minutes.
Remove from pan and using a plate, cup, or something sturdy, gently smoosh (oxymoron alert) the halves to make them look more like pancakes. Put them back in the frying pan for another 2 minutes.
Remove from pan, add some sea salt, and presto! You’ve got yourself a patacone bun!
I only had one plantain when I found this recipe, so Cory and I made open face black bean burgers when we tried this. It was nothing short of AMAZING!
