I’m not sure whether to call this recipe a crumble or an oatmeal bar, because it honestly does a bit of both. Heated up these melt and are just luscious, and cold they hold together like a bar. I made these to store in the fridge for breakfast bars for the week. However, this could also be a wonderful warm, healthy dessert!

Berry Filling Recipe

  • 1 lb strawberries
  • 4 oz blueberries
  • 8 oz blackberries
  • 4 oz raspberries
  • 1 tb trivia

Crust Recipe

  • 3 cups rolled oats
  • 2 cups almond flour
  • 2 eggs
  • 1 ts baking soda
  • 1/2 ts baking powder
  • 1/2 cup coconut oil
  • 1 1/2 tbs honey
  • 2 tb Cinnamon
  • 1 tb ginger

Directions

  1. Set oven to 350° F
  2. Melt coconut oil (just a little), beat eggs, and combine all crust ingredients in a bowl.
  3. Cut strawberries into small chunks, and combine in bowl with trivia or sweetener of choice.
  4. Grease or line a 13×9 in pan with parchment paper.
  5. Press crust into the bottom of pan.
  6. Top crust with berry mixture
  7. **optional** Top berries with some extra crust, or with a sprinkle of oats and almond flour and honey.
  8. Bake for 35-40 minutes
